This is the ultimate way to dress up some rice & it is to-die-for! It adds that touch of creaminess without the cals. Great on its own but even better with our crock pot skirt steak. Pairing these two makes the perfect duo for guests without having to slave by the stove all day. Your friends will be so impressed, plus, they don’t need to know it was so simple!
Ingredients: (serves 3-4)
- 2 avocados
- 1/8 cup fresh cilantro, chopped
- 2 cups brown rice
- juice of 1 lime
- 1 clove of garlic, minced
- salt & pepper, to taste
- Cook brown rice according to package.
- Mash avocados in a large mixing bowl. Stir in lime juice, cilantro, and garlic, then season with salt and pepper to taste. Stir in warm cooked rice and serve warm.
