Basil Pesto Vinaigrette

Take some of our Lemon-Basil Pesto and add a little red wine vinegar and lemon juice and BAM…you have a delicious salad dressing! Top this with some grilled chicken or shrimp for a delicious dinner and complete meal, or just do a little side salad (with a big impact) like I did here.

Ingredients
  1. 2 tbsp. Lemon-Basil Pesto
  2. 1 tbsp. red wine vinegar
  3. 1 tbsp. lemon juice
Instructions
  1. Combine all ingredients in a jar or bowl, whisk or shake to combine.
  2. I drizzled a little over mixed spring greens and some arugula with a few sliced tomatoes and some quartered artichoke hearts.
Notes
  1. Serving suggestions: Make a salad and top with grilled chicken or shrimp for a complete meal. Or do a side salad like I did here with a big impact!
