Cauliflower “Rice” Pilaf

Here is a great side dish that goes well with anything, but I am especially loving it with my Crispy Greek Chicken Thighs and my Lamb Meatballs! I always keep a bag of Trader Joe’s Cauliflower rice in my freezer as an easy, go-to side dish like this one here. Enjoy!

Ingredients
  1. 1/2 yellow onion, finely diced
  2. 2 tbsp. olive oil
  3. 2 cups riced cauliflower
  4. 1/4 tsp. ground turmeric
  5. 1/4 tsp. garlic powder
  6. salt and pepper, to taste
  7. Juice of 1/2 a lemon
  8. 1 tbsp. freshly chopped parsley
Instructions
  1. Heat olive oil a skillet over medium heat.
  2. When hot, add the diced onion and season with salt and pepper, to taste. Saute until the onions are tender-- about 5 minutes.
  3. Now add in the riced cauliflower, turmeric, and garlic powder. Continue to saute for about 3-4 more minutes, or when the cauliflower is just tender.
  4. Squeeze in the juice of the lemon and the parsley.
  5. Serve and enjoy!
