This creamy avocado-cilantro sauce is my new favorite thing. I originally made it for my Fish Taco Bowl recipe (will post tomorrow) but I used the leftovers throughout the week and realized how versatile it was. Top it on any protein to amp up your meal, and it especially goes well on a Taco Salad!
Typically creamy avocado sauces have sour cream in it but this one here is using my homemade mayo and it is seriously fantastic. It lasts about a week in the fridge (without turning brown like most avocado based sauces), so it is perfect for meal prep! Enjoy!
- 1/2 Cup Homemade Mayo
- 1 ripe avocado
- 1/4 cup loosely packed cilantro leaves
- juice of 2 limes
- 1 tsp. white vinegar
- 1 clove garlic, minced
- salt and pepper, to taste
- Combine all ingredients in a food processor or blender, blend until smooth.
