Greek Cucumber Salad



  • 2 cucumbers
  • 1 cup of halved cherry tomatoes
  • 3/4 cup of pitted and halved kalamata olives
  • 1/4 red onion, sliced very thinly
  • 1/2 cup of feta cheese crumbles
  • 1 tbsp. fresh chopped dill
  • 1 tbsp. fresh chopped mint
  • 1 tbsp. fresh chopped basil
  • 1 tbsp. fresh chopped parsley
  • 1 clove of garlic, minced
  • 2 tbsp olive oil
  • juice of 1 lemon
  • 1 tbsp. red wine vinegar
  • 1/2 tsp. salt
  • 1/4 tsp. course black pepper


1.  Peel the cucumbers, they don’t have to be perfect, I like to leave just a little of the peel on them.  Cut the cucumber in half lengthwise, then slice them so that they make little semi-circles. Place sliced cucumber in a medium sized bowl.

2. combine remainder of ingredients in the bowl with the cucumbers.  Gently toss until well blended.  Refrigerate for at least 30 minutes, but up to 4 hours. Serve and enjoy!
