Jalapeno and Ginger Chicken Salad

This was one of those creations based on things that I had in my fridge/pantry that was so delicious, I had to share! A nice, fresh, asian-y chicken salad that takes about 15-20 minutes from start to finish to throw together, I love it!

Ingredients
  1. 4 chicken breast tenders
  2. 1/2 jalapeno, sliced
  3. 1 tsp. minced ginger
  4. 1 tsp. minced garlic
  5. 2 tbsp. olive oil
  6. 1 tbsp. organic tamari (use Coconut Aminos if Whole30)
  7. 1/4 red onion, sliced
  8. 3 baby bella mushroom, sliced
  9. Juice of 1 lime plus 1 wedge for serving
  10. salt and pepper, to taste
  11. 1/2 head of romaine lettuce
Instructions
  1. Heat 2 tbsp. olive oil over medium high heat.
  2. Season both sides of chicken tenders with salt and pepper. Place in the hot oil and saute for about 2 minutes on one side.
  3. Add in the sliced jalapeno, the onions, mushrooms, the garlic and the ginger and continue to saute, stirring occasionally for about 5 more minutes.
  4. Stir in the organic tamari or coconut aminos. Saute for about 2 more minutes, or until chicken is cooked through.
  5. Pour entire contents over a bed of romaine lettuce and serve with a wedge of lime.
