Roasted Brussels Sprouts and Sweet Potatoes Ingredients:
2 lbs of brussels sprouts (they usually come in 1 lb bags)
2 large sweet potatoes
3-4 tablespoons of olive oil
Montreal steak seasoning
parchment paper
Method:
1. Remove woody ends off Brussels Sprouts. Then cut in half lengthwise.
2. Peel the sweet potatoes. Cut into 1-inch cubes.
3. Cover a large cooking sheet with a large piece of parchment paper. Then arrange the Brussels Sprouts and the sweet potatoes evenly across the cooking sheet. Drizzle olive oil over the vegetables and toss so that they are all evenly coated. Season generously with Montreal steak seasoning.
4. Roast in oven at 400 degrees for about 25-30 minutes.
